Is there a way to stop sending email notification to customers. Can we turn that off?

There are 2 options to stop sending notifications:

For Senders:

There is an option available within "My Profile" where Senders can find the Settings to switch On/Off daily & weekly mails.

Sender can also click on the link "My Settings" or "Disable all Notifications" in the emails received.

For Collectors:

You can edit the Document Request and edit the Notification Settings.
